Blue Cheese Potatoes

- 1 lb. Biggins® potatoes, scrubbed, peeled and cubed
- 1 tbsp. olive oil
- ⅛ tsp. salt
- ⅛ tsp. pepper
- 8 oz. bacon, cooked and crumbled
- ½ c. shredded cheddar cheese
- ¼ c. crumbled blue cheese
Preheat oven to 400-degrees.
In a baking dish, toss potatoes with olive oil and season with salt and pepper. Bake for 30-40 minutes or until potatoes are tender.
While potatoes are baking, mix bacon and cheeses in a small dish and set aside.
When potatoes are cooked, remove potatoes from oven and sprinkle with the bacon and cheese mixture and return to oven and bake for an additional 5 minutes, or until cheese is melted.
