Creamy Fiesta Potato Salad

- 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
- ½ c. mayonnaise
- 1 tsp. chili powder
- 1 tsp. salt
- ½ lime, juiced
- 1 can (11 oz.) whole kernel corn, drained
- 2 green onions, sliced or ¼ c. onion, chopped
- 1 small red pepper, seeded, finely chopped
In a large saucepan, add potatoes and salt and cover with water. On medium-high heat, bring potatoes to a boil and simmer for 13-17 minutes, or until potatoes are tender; drain and set aside to cool.
In a large bowl, mix mayonnaise, chili powder and lime juice. Add potatoes and remaining ingredients and toss lightly to combine ingredients.
Refrigerate for several hours before serving.
