Creamy Lime Potatoes

  • 1 lb. Biggins® potatoes, scrubbed, peeled and cubed
  • 1 tsp. salt
  • ½ c. sour cream
  • Zest of one lime
  • Juice of one lime
  • Salt and pepper


Add the potatoes and salt to medium saucepan and cover with water. Cover pan. On medium-high heat, bring to a boil, cooking until potatoes are fork tender, about 12-15 minutes. Remove potatoes from heat and drain.

While potatoes are cooking, in small bowl, combine sour cream, lime zest and lime juice; stirring well.

Toss potatoes with lime sauce and season with salt and pepper, to taste.
