Creamy Potato Salad

Prep: 10 min. •  Cook: 20 min. •  Serves: 12


Ingredients:

  • 2 lbs. Biggins® potatoes, scrubbed, peeled and cubed
  • 1 c. mayonnaise
  • ½ c. prepared slaw dressing
  • ⅜ c. sweet relish
  • 1 tbsp. dark mustard
  • ¼ c. pickle juice, from the relish
  • 1 tbsp. cider vinegar
  • ½ small stalk celery, diced
  • ⅓ c. chopped white onion
  • 2 hard-boiled eggs, chopped


Directions:


Boil potatoes for 15 minutes or until fork tender. Drain and set aside to cool. Combine remaining ingredients in large bowl and mix. Add potatoes and chill before serving.
