Cumin Spiced Potatoes

Ingredients:

  • 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
  • Extra-virgin olive oil, for drizzling
  • 1 tsp. cumin seeds
  • Coarse salt


Directions:


Preheat oven to 400-degrees.


Place potatoes on a baking sheet and drizzle with oil to lightly coat. Toss potatoes with cumin seeds.


Roast 20 minutes, then broil an additional 5 minutes on high to brown the edges and crisp the skin. Add salt, to taste.
