Horseradish Mashed Potatoes

- 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
- 1 tsp. salt
- ¼ c. milk
- 2 tbsp. butter
- 1 tsp. prepared horseradish
- Salt and pepper, to taste
In a medium saucepan on medium-high heat, add salt, potatoes and enough water to cover the potatoes. Cover and bring to a boil. Reduce heat to medium-low and simmer 8-10 minutes, or until desired tenderness. Remove potatoes from heat and drain.
Add milk, butter and horseradish to potatoes and mash with potato masher. Season with salt and pepper. Serve hot.
