Irish Champ Potatoes

- 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
- 1 tsp. salt
- 4 green onions, finely chopped
- ⅓ c. milk
- 2 tbsp. butter
- Salt and pepper, to taste
In medium saucepan on medium-high heat, combine salt, potatoes and enough water to cover the potatoes. Cover and bring to a boil. Reduce heat to medium and simmer 8-10 minutes, or until desired tenderness.
While potatoes are cooking, prepare the green onions. In a small saucepan add the green onions and milk. Bring to a boil on medium-high heat. Reduce heat to medium-low and simmer 3-5 minutes, or until green onions are tender.
When potatoes are done cooking, drain, return to pot and add green onion mixture. Use a potato masher to mash the potatoes until they are creamy. Season with salt and pepper, to taste. Place in serving bowl and place butter in a well in the middle of the potatoes to melt. Serve hot.
