Parsley Sensation Potatoes

Prep: 5 min. •  Cook: 15 min. •  Serves: 4-6


Ingredients:

  • 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
  • 1 tsp. salt
  • 2 tbsp. butter
  • 1 ½ tbsp. finely chopped fresh parsley (or 1 ½ tsp. dried parsley)
  • Salt and pepper, to taste


Directions:


Add salt, potatoes and enough water to cover the potatoes in a medium saucepan and cook over medium-high heat. Cover and bring to a boil. Reduce heat to medium-low and simmer 10-15 minutes, or until desired tenderness.


When potatoes are done cooking, drain and add butter and parsley. Stir until butter is melted. Season with salt and pepper, to taste. Serve hot.
