Potato Nicoise Salad

- ½ lb. Biggins® potatoes, scrubbed, peeled and cubed
- 2 heads lettuce, separated into leaves
- 1 large chicken breast, grilled and cut into strips
- 2 hard-boiled eggs, cut into wedges
- 2 c. steamed green beans
- 8 oz. grape tomatoes
- ½ c. Italian dressing
Boil potatoes until fork tender, drain and set aside.
Place lettuce in large serving bowl and top with chicken, eggs, green beans, potatoes and tomatoes. Add dressing and toss.
