- 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
- 1 tsp. salt
- 2 tbsp. olive oil
- 2 tbsp. sherry
- 2 tbsp. cider vinegar
- 2 tbsp. brown sugar
- ½ tsp. salt
- ⅛ tsp. cayenne pepper
Add salt, potatoes and enough water to cover the potatoes to a medium saucepan and cook on medium-high heat. Cover and bring to a boil. Reduce heat to medium and simmer 5 minutes.
While the potatoes are cooking, combine the olive oil, sherry, cider vinegar and brown sugar in a small bowl. Stir until the brown sugar is dissolved.
Drain the potatoes and return to the pot. Add the sauce and simmer for 10-12 minutes, or until desired tenderness. Add salt and cayenne pepper. Serve hot.
