Potatoes Au Gratin

- 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
- 1 tsp. salt
- 1 c. sour cream
- 2 tsp. butter
- 2 tsp. parmesan cheese
- ½ tsp. salt
- 2 egg yolks, beaten
- 1 tbsp. chopped chives
- Panko crumbs or fine breadcrumbs
- Grated Parmesan cheese
Preheat oven to 350-degrees.
Add salt, potatoes and enough water to cover the potatoes to a medium saucepan and cook over medium-high heat. Cover and bring to a boil. Reduce heat to medium and simmer 5 minutes. Drain potatoes and place in a greased casserole.
In a small saucepan, combine sour cream, butter, Parmesan cheese, salt and pepper. Heat on low heat until cheese is melted. Remove from heat and add egg yolks and chives. Stir to combine.
Pour mixture over potatoes; cover with Panko crumbs. Sprinkle with parmesan cheese. Bake for 30-35 minutes, or until potatoes are tender and top is browned. You can broil the top to brown, but watch very carefully so it doesn't burn. Serve hot.
