Roasted Rosemary Potatoes

- 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
- 2 tbsp. olive oil
- 1 ½ tsp. finely chopped fresh rosemary (or ¾ tsp. dried rosemary)
- ¾ tsp. salt
- ½ tsp. pepper
Preheat oven 400-degrees.
In medium bowl, add potatoes, olive oil, rosemary, salt and pepper. Toss to coat. Place potatoes on rimmed baking sheet. Place baking sheet in middle of oven and roast for 12-15 minutes, or until desired tenderness. Serve hot.
