Scalloped Potatoes

Prep: 15 min. •  Cook: 10 min. •  Serves: 4-6


Ingredients:

  • 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
  • 1 tsp. salt
  • ¼ c. butter
  • ¾ c. heavy cream
  • 1 tsp. salt
  • ½ tsp. pepper
  • ⅛ tsp. cayenne pepper
  • 1 c. shredded Monterey-Jack cheese


Directions:


Preheat oven 400-degrees.


Add salt, potatoes and enough water to cover the potatoes to a medium saucepan and cook over medium-high heat. Cover and bring to a boil. Reduce heat to medium and simmer 5-7 minutes.


Drain and return to pan. Add cream and continue cooking, stirring often, until liquid is reduced by half. Season with salt, pepper and cayenne pepper.


Spoon mixture into greased shallow casserole dish and cover with cheese. Bake until cheese is melted and lightly browned, about 10 minutes.
