Skillet Creamed Potatoes

- 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
- 1 c. sour cream
- ½ c. half and half
- 2 tbsp. finely chopped onion
- 1 clove garlic, minced
- 1 tsp. salt
- ½ tsp. pepper
- ½ tsp. paprika
- 1 tbsp. chopped parsley, optional
In small bowl, combine sour cream, half and half, onion, garlic, salt, pepper and paprika. Set aside.
Place potatoes in a skillet and add sour cream mixture. Toss to combine. Cover skillet and cook over medium heat. Bring sour cream mixture to slow simmer and cook until potatoes are tender, about 15-20 minutes. While potatoes are cooking, be sure to stir and check heat. Lower heat if cream is scorching. Serve hot.
