Smashed Potatoes with Chives

  • 1 ¾ lbs. Biggins® potatoes, scrubbed, peeled and cubed
  • 3 tbsp. butter or margarine
  • ½ c. sliced chives or green onions
  • Salt and pepper, to taste


Place potatoes in a large pot, cover with water and salt and bring to a boil.

Cook potatoes until tender when pierced with a fork, about 20 minutes. Drain potatoes and set aside.

Add butter to pot and melt over medium-high heat. When butter is melted and just beginning to bubble, add drained potatoes and stir to coat.

With a fork, slightly smash each potato just to break the skin and cook until golden brown, stirring regularly.

Stir in chives, season with salt and freshly ground black pepper and serve.
