Zesty Bacon Potato Salad

- 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
- 1 tsp. salt
- 3 cloves garlic, smashed
- 4 slices bacon, cut into chunks
- ½ medium red onion, diced
- 3 ribs celery, diced
- ¼ c. red wine vinegar
- Salt and pepper, to taste
- ¾ c. mayonnaise
- ¼ c. Dijon mustard
Place potatoes in a large pot with the garlic and salt. Cover with water; bring to a boil and simmer until the potatoes are fork tender, about 13-15 minutes.
While the potatoes are cooking, put bacon in a frying pan and cook over medium-high heat, until bacon is crispy. Remove from heat and add the onions, celery and vinegar. Season with salt and pepper, to taste.
In a small bowl, combine the mayonnaise and mustard.
When the potatoes are fork tender, drain and discard the garlic. Transfer to a large mixing bowl and stir in bacon mixture while the potatoes are still hot. Fold in the mayonnaise dressing. Season with salt and pepper, if desired. Serve hot or at room temperature.
