Smothered Pork Chops & Potatoes

Prep: 25 min. •  Cook: 4-7 hours •  Serves: 6


Ingredients:

  • 1 ½ lbs. Biggins® potatoes, scrubbed, peeled and cubed
  • 6 bone-in pork chops
  • 4 slices bacon, cut into ¼-inch pieces
  • 3 medium onions, peeled and thinly sliced
  • 2 tsp. brown sugar
  • 2 ½ c. low-sodium chicken broth
  • ¼ c. soy sauce
  • 2 tbsp. Minute® tapioca
  • 1 tbsp. minced garlic
  • 1 tsp. dried thyme leaves
  • ½ tsp. salt
  • 6 bay leaves


Directions:


In sauté pan on medium heat, add bacon and cook until crisp, about 6-8 minutes. Remove bacon and place on plate lined with paper towel. Add onions, brown sugar, garlic, thyme and salt to sauté pan. Increase heat to medium-high and cook onions until they are caramelized, about 10-15 minutes. Add chicken broth and stir to combine.


On bottom of slow cooker, add onion mixture. Stir in soy sauce, tapioca and bay leaves. Add potatoes. Season pork with salt and pepper and place on top of potatoes. Press on pork chops to make sure some of the liquid comes to the top. Cover and cook on LOW for 7 hours or on HIGH for 4 hours. Garnish pork chops with bacon bits and serve with onion sauce.
