Sweet Potato Pancakes

Prep: 20 min. •  Cook: 10-15 min. •  Serves: 3-4


  • 3 cups raw Biggin's® sweet potatoes, scrubbed, peeled and shredded
  • 1 granny smith apple
  • 1 medium onion
  • 2 tbsp. grated fresh ginger
  • 2 tsp. lime juice
  • Salt and pepper, to taste
  • 1 c. all-purpose flour
  • 1 c. milk
  • 2 eggs
  • 3 tbsp. melted butter


Peel apple, ginger and onion. Remove the core from the apple and finely dice the apple and onion. Next, grate the ginger. Combine apple, onion, ginger, lime juice, salt and pepper in a bowl, stir together and let stand for 5 minutes. Add the shredded sweet potatoes and stir, mixing until combined well.

In a separate bowl, mix milk into flour with whisk until there are no lumps. Add the cracked eggs and melted butter and stir until this forms a batter. Pour batter into sweet potato mixture and stir until combined well.

Heat a non-stick sauté pan over medium-high heat and lightly grease. Spoon approximately ¼ cup of the batter into heated pan to form a pancake. Cook until edges begin to brown, then flip, cooking until done. Continue doing this until all of the batter is gone.
