Sweet Potato Muffins

Ingredients:

  • ¾ c. oat bran
  • ¾ c. whole wheat flour
  • ⅔ c. granulated sugar
  • 1 ½ tsp. ground cinnamon
  • 2 tsp. baking powder
  • 1 tsp. baking soda
  • ⅛ tsp. salt
  • 1 c. apples, peeled and shredded
  • 1 c. Biggin's® sweet potatoes, scrubbed, peeled, cooked and mashed
  • 2 large eggs
  • ⅔ c. plain non-fat Greek yogurt


Directions:


Preheat oven to 350-degrees. In a bowl, combine bran, flour, sugar, cinnamon, baking powder, baking soda, salt and apples. In another bowl, combine sweet potatoes, eggs and yogurt. Add sweet potato mixture to flour mixture and stir all ingredients until just mixed. Spray 12 muffin cups with vegetable cooking spray. Fill muffin cups ⅔ full. Bake for 18-20 minutes, or until done.
