Sweet Potato Pizza

  • 2 raw Biggin's® sweet potatoes, scrubbed, peeled and shredded
  • ½ onion, shredded
  • ½ c. shredded cheese – parmesan and cheddar work well
  • ¼ c. flour
  • ¼ tsp. garlic powder
  • ¼ tsp. salt
  • 2 large eggs
  • Non-stick cooking spray
  • ½ c. additional shredded cheese (topping)
  • ½ c. ham or turkey or broccoli florets or topping of your choice


Preheat oven to 400-degrees. In a large bowl, combine shredded sweet potatoes, onion, and ½ cup shredded cheese. Toss these ingredients together and add flour, garlic powder and salt. Crack the eggs into a small bowl and stir. Next, pour the eggs into the sweet potato bowl and toss well to combine. Coat a baking sheet with non-stick cooking spray. Pour sweet potato mixture onto middle of tray and spread it out into a circle about ½-inch thick. Bake for 20 minutes, until the bottom begins to brown. Remove “pizza” from oven and slide a metal spatula underneath it to loosen. Put on toppings and return to oven just until cheese melts, about 5 minutes (or you can also put it under the broiler for a few minutes). Remove from oven, loosen bottom of “pizza”. Allow to sit for 3 minutes. Cut into wedges and serve.
