Bacon Mashed Sweet Potatoes

  • 2 Biggin's® sweet potatoes, scrubbed, peeled and cut into 1-inch cubes
  • 2 slices of bacon, cooked and chopped
  • ½ c. plain non-fat Greek yogurt
  • 2 tbsp. butter
  • Salt and pepper, to taste


Preheat oven to 400-degrees. Place cubed sweet potatoes on baking pan in a single layer and bake for 25-30 minutes, or until soft. Transfer sweet potatoes to a large bowl. Add bacon, yogurt and butter. Smash the sweet potatoes with a potato masher or fork until fluffy but some lumps remain. Season with salt and pepper, to taste.

Bonus Ideas: Start with the same recipe above, omit the bacon and yogurt and try adding the following:

Orange and Honey Sweets: cut back yogurt to ¼ cup, add ½ cup orange juice, ½ teaspoon orange zest, 2 tablespoons honey, and ½ teaspoon cinnamon

Horseradish Sweets: Add 1-2 tablespoons horseradish for a zesty flavor

Smokey Sweets: Add half can chopped chipotle peppers in adobo sauce

Pie-Like Sweets: Keep the yogurt, add ½ teaspoon cinnamon, ¼ teaspoon. freshly grated nutmeg, ¼ teaspoon ground cloves
