Sweet Potato Hashbrowns

  • 2 raw Biggin's® sweet potatoes, scrubbed, peeled and shredded
  • ½ yellow onion, shredded
  • 1 tbsp. Olive oil
  • Sea salt and pepper, to taste


Preheat the oven to 400-degrees. Shred the sweet potatoes and onion in a food processor. Place the shredded potatoes and onion on a baking sheet and pour the olive oil over; toss to coat. Sprinkle with salt and pepper. Bake for 8 minutes. Using a metal spatula, toss the sweet potatoes. Return to oven and continue baking for another 5-8 minutes, until potatoes just begin to brown. Toss a bit more and serve.
