Grilled Smashed Potatoes with Chives

- 1 ¼ lbs. Biggin's® potatoes, scrubbed, peeled and cubed
- Salt and pepper, to taste
- Extra virgin olive oil
- ½ c. chopped chives or green onions
Place potatoes in a large pot, cover with water and salt and bring to a boil. Reduce heat and simmer potatoes for 20 minutes, or until the potatoes are fork tender. Remove from heat and drain.
Spread potatoes on a baking pan that is lined with non-stick aluminum foil. With a fork, slightly smash each potato just to break the skin.
Using a pastry brush, brush the tops of potatoes with olive oil. Turn potatoes with a spatula, and brush other sides of potatoes with olive oil. Season with salt and pepper, to taste.
Transfer sheet of foil with potatoes onto a preheated grill and cook over medium heat for about 10 minutes, turning once. Potatoes should be lightly browned on each side.
Remove potatoes from grill and top with fresh chives or green onions.
